    Haha, you beat me to it Surf, lol i just came in here abt to start a What are you cooking for dinner tonight, two minds think alike O0 ;D

    Well i was thinking about cooking a BBQ but because i could not be bothered to go outside n had a tad to drink, i have decided to do Apricot Chicken :D

    Who's coming there will be pleanty left over, lol :p

    I got the beer and the Jim Beam also :D

    Here you go

    1 tbspn FARMLAND* Sour Cream, optional
    500 g Skinless Chicken Breast Fillets, cut into large cubes
    2 Spring Onions, sliced finely
    1 Zucchini, sliced into ribbons with a peeler
    Potatoes, for mashing, when serving
    1 tbspn FARMLAND* Olive Oil
    1 can ARDMONA* Apricot Nectar
    40 g pkt FARMLAND* French Onion Soup Mix
    825 g can ARDMONA* Apricot Halves in Natural Juice, drained

    1. Heat oil in a large non-stick frying pan over medium heat. Add chicken and cook for 6 minutes or until golden brown.

    2. Combine apricot nectar and soup mix. Add to chicken with apricots. Stir gently. Simmer, covered, for 6 minutes. Add zucchini and spring onions and simmer for a further minute or until zucchini is just soft.

    3. Remove from heat and stir in sour cream. Serve with mashed potato.


    I will do some nice fresh veggies to add on the side of the plate :p

    You should pack some of those flounder on dry ice and overnight them to me. The people out here have no idea what seafood is. I had to order some clams from the store last week, when I was on the checkout line after picking them up, the checkout lady said to me "I never seen SHRIMP in the SHELL before". I about pissed myself.

    FOUND IT! nope...that's not it...
